Why?

Why do you have to refrigerate things like salad dressing AFTER you open it, but not before?

    Regrigerate After Opening:

    These foods must be refrigerated after opening to ensure the safety of the product. After opening, these foods cannot be left at room temperature longer than 2 hours or bacteria will begin to grow at an exponential rate (foods aren't subject to this while still factory sealed). If the ambient temperature is warmer than 80 degrees Fahrenheit, these foods should be back in the refrigerator within 1 hour.
